Every week I wrap 5 or 6 big sweet potatoes in tinfoil and pop ‘em in the oven for about an hour at 425 degrees. Five minutes of hands-on cooking time yields a week’s worth of caramelized, vitamin-packed goodness for my lunches. For at-home Sunday brunches, I love roughly chopping a Yukon Gold potato, brushing it with a bit of pastured butter, and throwing it in the oven at 425 til golden brown.
